I’ve been in the hospitality industry for over 20 years, I’m that time I’ve learned that when it comes to managing Food and Beverage, the focuses are; revenue, cost of sales, quality and efficiency. While the Goal is to achieve all of them, you often have to sacrifice one (or two) of them up in order to achieve the others. Cost of sales and revenue are my deciding factors so when I was introduced to Gas Flow I was intrigued. A system that allows you to not only create a high-quality product but also allows for efficiency and cost controls? No way! Reluctantly I decided to give it a chance, and so we brought in the Nitro Espresso Martini. 

Let me speak to each of the metrics that matter to me. Quality: I’ve had dozens of espresso martinis, this one might be my favorite. Presentation, it’s picture perfect and the same every time. I’ve served at places that offer an EM on their menus, sometimes they come out with a nice head, other times there’s none at all. The Nitro Espresso Martini always has a beautiful consistent head. The nitrogen creates bubbles that cascade in the glass like a Guinness which is a nice touch.

Now for the most important, this immediately became our best seller and featured cocktail. Since it is a pre-batched product I don’t worry about bartenders over pouring. Because I have the ability to determine the type of vodka we use, I can directly control my cost. And finally, efficiency, a wise man once told me that many businesses are efficient at inefficient processes. That stuck with me. An espresso martini is often sold on sight, meaning when someone orders one, others see it and order one too. Back to back orders can take minutes to properly produce but this solves that too! Now my bartenders can produce one in less time than it takes to fill a pint of beer.

Seeing as how I have my beverage cost calculated at 18% on this drink, we welcome multiple orders! And of course, none of this means anything if people don’t like it. Well it’s only been two months and the results and comments are overwhelmingly positive.  I highly recommend the Gas Flow system to anyone looking to streamline processes while increasing revenue.

All I can think now is how I can bring on another Nitro beverage!
